If you struggle to eat using knife an fork due to disease, treatment or whatever, you might find one of these useful. It is called a Knork and is a one handed combined knife and fork. It's chunky and made of stainless steel. It can be used left or right handed and is a superb bit of kit. I got 2 from Amazon (not cheap but worth it) but I'm sure that there are plenty of other suppliers.
